Textured Soy Protein (T.S.P) is also known as Textured Vegetable Protein (T.V.P). It is a mechanically textured product with fibrous structure that approaches the texture of meat. Soy curls have a great nutty flavour and are typically a golden brown colour.
Soy Curls double in weight when reconstituted and requires no further cooking or processing, only rehydration. When hydrated, this ingredient has a chewy texture and can be used to extend or replace meat in many food preparations including minced meat, casseroles, taco fillings and pizza toppings as a high complex carbohydrate, low-fat, high-fibre food. Soy curls may also be eaten as a snack, salad topping or sprinkled on top of your favourite dish.
Add 7/8 cup boiling water to 1 cup soy curls. Stir until all water is absorbed and let soak for 10 minutes. Drain water and season as desired before cooking. Yields 2 cups cooked soy curls.
