Recipe Share: Vegan Cranberry Brownies
It may come as no surprise to you, but we love chocolate here at the HAMA headquarters. Whenever we get the chance, we try out new vegan recipes using as many of our own ingredients as we can!
Now that we stock fair trade organic cocoa powder, we figured it was time to make some brownies. Delicious, dense, flavourful and down right decadent.
As we try to avoid sugars as much as possible, these brownies are sweetened with mashed banana, making them sugar free. We find that while they aren't as sweet as a traditional brownie, they do taste delicious... and the pop of tart and sweet cranberries helps please our sweet tooth.
Below is the recipe that we used, with a few adjustments. Give it a try and let us know what you think!
Vegan Chocolate Brownies - With Organic Cranberries, Goji Berries and Brazil Nuts
2 tbsp warm water
2 tbsp ground flax seeds
1.5 ripe bananas, mashed
3/4 cup organic cocoa powder
1 tsp baking powder
3/4 tsp sea salt
1 1/4 cup vegan milk (almond, rice, oat etc)
1/2 cup melted coconut oil
2 tsp vanilla
1/2 cup organic chocolate chips
1/4 cup chopped nuts (we used organic brazil nuts)
1/4 cup organic cranberries
1/8 cup organic goji berries
1: Preheat the oven to 350 F and oil a square 8" baking pan.
2: Start by mixing together the ground flax and water, let sit in the bowl. After a few minutes, add in the mashed banana, and other wet ingredients, including the melted coconut oil. I like to add the the dried cranberries and goji berries at this point, so that they soak up a little moisture and get nice and juicy.
3: In another bowl, mix together dry ingredients, including the chopped nuts and chocolate chips.
4: Mix both together, stir just until combined. Pour into your oiled baking pan, and smooth the top.
5: Bake 45 to 55 minutes, until a toothpick inserted in the middle comes out clean.
6: Let cool 15-20 minutes in the pan before cutting and serving.
